We have a default post time, but create the ability to change it on a per day basis.

This would be a fantastic feature. I’ve started your trial and this is one feature I’d miss from Zoho Social.
They had a nifty admin interface to manage the post schedule. A row for each day, and each time in a column, with a button to add additional times.
When posting you can either manually choose date or pick the auto schedule option. This would then schedule in posts (one for each channel) into the earliest available slot.

Yes, or rather to see it as empty slots in the calendar / list-view as e.g. buffer does.
